PICANHA
Picanha is taken from the top of the loin of the cow, on both sides of the spine, so each cow yields 2 pieces. Picanha is a cut of Brazilian origin, very popular in that country, also known as rump cover, rump cap, sirloin cap, or coulotte. It is a cut of meat distinguished by its juiciness, with a thick layer of fat that gives the meat a lot of flavor. It is cooked over coals or on the grill, and popular Brazilian skewers are prepared with it.
